What's the "must do" and must go places in Hokkaido?
If you really want to enjoy Hokkaido, I would recommend a free and easy. Get a plane ticket there, rent a car (with GPS) and enjoy. The roads there are easy to drive. They do not have a lot of main roads, so it is not easy to lost. You can fly into Sapporo or Hakodate. To go cheap, try the youth hostels or family inns. Go during August or September and enjoy the lavender blooming season. There are usually 2 route that most tour group will take. The Hakodate, Otaru, Sapporo route or Sapporo, Mashuko route. Personally, I love Hakodate and Otaru; but then again I'm a romantic. If you are an adventurer and hope to see a bear face to face, try Shiretokoro but the inner roads are only open during summer period. What to try there – sashimi. The uni, hotate, toro, (getting hungry already). Try them in Hakodate or Otaru. Sapporo is not as fresh. Must try the spider crab. They have a tabe-hodai (buffet) which you can eat as much crab as you can. The brewery in Hakodate brew excellent beer. Remember to have some luggage space to buy some to bring back home. Don't forget to try the Sapporo Ramen and Sapporo beer (you can arrange for a visit to the brewery). Lastly, onsen. Soak in as many as you can. Forget about the indoor ones. Go for the outdoors. Even in summer, the weather is not very hot and there is no describing the feeling of soaking in the open, enjoying the scenery (with a cup of sake in one hand and your lady companion the other). Incidentally, there is a hotel near Hakodate that has a onsen (more like a ofuro, I think) at the balcony in most of the rooms. The balcony faces the sea and the setting sun… a soak before a sumptuous meal and a soak after… ahhh hard to find a more enjoyable experience…

Sapporo, Hakkodate are two top desinations. Not to mention there are several national parks up there. I don't know any off the top of my head but this website has many listings for travel agents.
